Glossary of Thai Herbs and Spices

Lemon Grass - an aromatic grey-green grass. The bases of the stems are used in cooking and they have a lemony flavor and aroma.

Galangal - a larger and lighter-colored relative of ginger with its own distinctive taste.

Kaffir lime - a fruit widely used in cooking because of its sour, sharp flavor.

Tamarind - a fruit whose brown pulp is used in cooking. The juice adds a sharp sour flavor without the tartness of lemon.

Green Basil - a hot form of basil that tends to leave a burning sensation on the palate.

Roasted Curry Paste - a prepared mixture containing dried chillies, shallots and garlic as well as other ingredients, all roasted and pounded to give them a consistency of a paste.

Curry Sauce - green, red, or yellow curry paste cooked in coconut milk.

Curry Powder - a prepared mixture of spices such as tumeric, coriander seed, ginger, cloves, cinnamon, mustard, cumin and chili.
